Darling Clementine® & Darling Lemon®: Citrus & Dill Roasted Tri-Color Carrots
- 1 lb. tricolor carrots
- Zest of 1 Darling Clementine®
- 2 Darling Clementines®, sliced
- 2 Darling Lemons®, sliced
- Fresh dill or parsley
- Salt + pepper
- Olive oil
- Preheat oven to 400 degrees.
- Peel carrots and cut in half longways.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Arrange sliced Darling Clementines® and Lemons® over the top and roast about 30 minutes, turning at the 20 minute mark, until caramelized and tender.
- Sprinkle with Darling Clementine® zest and sprinkle with herbs to serve.
