Darling Clementine® & Darling Lemon®: Citrus & Dill Roasted Tri-Color Carrots



  • 1 lb. tricolor carrots
  • Zest of 1 Darling Clementine®
  • 2 Darling Clementines®, sliced
  • 2 Darling Lemons®, sliced
  • Fresh dill or parsley
  • Salt + pepper 
  • Olive oil


  1. Preheat oven to 400 degrees.
  2. Peel carrots and cut in half longways.
  3. Drizzle with olive oil and sprinkle with salt and pepper.
  4. Arrange sliced Darling Clementines® and Lemons® over the top and roast about 30 minutes, turning at the 20 minute mark, until caramelized and tender.
  5. Sprinkle with Darling Clementine® zest and sprinkle with herbs to serve.
