Darling Clementine® & Darling Lemon®: Citrus & Dill Roasted Tri-Color Carrots



  • 1 lb. tricolor carrots
  • Zest of 1 Darling Clementine®
  • 2 Darling Clementines®, sliced
  • 2 Darling Lemons®, sliced
  • Fresh dill or parsley
  • Salt + pepper 
  • Olive oil


Preheat oven to 400 degrees. Peel carrots and cut in half longways. Drizzle with olive oil and sprinkle with salt and pepper. Arrange sliced Darling Clementines® and Lemons® over the top and roast about 30 minutes, turning at the 20 minute mark, until caramelized and tender. Sprinkle with Darling Clementine® zest and sprinkle with herbs to serve.
