Darling Clementines® Overnight Oats

Ingredients:

  • 2 cups rolled oats
  • 1 tsp cinnamon
  • 1 ½ cups milk (almond if you are dairy free)
  • 3 tbsp nonfat Greek yogurt
  • 1 tsp clementine zest
  • Juice of 1 Darlingclementine
  • 2 tbsp honey
  • Sliced almonds for texture (optional)
  • 1 Darling Clementine, peeled and segmented

Directions:

  1. In a large bowl, gently stir together all ingredients except clementines. Divide mixture into two separate mason jars.
  2. Place jars in fridge for at least one hour – preferably overnight – to allow oats to absorb moisture
  3. When ready to serve, top oats with segmented clementines, stir, and enjoy cold! Alternatively, heat oats in the microwave in 30 second increments before adding the fresh clementines and stirring
