Persimmon Bruschetta
Ingredients:
- 1 French baguette, sliced into 1/2 inch thick rounds
- 2-3 tablespoons olive oil, plus more for drizzling
- 4 ounces burrata
- 1/2 cup arugula
- 1 Darling Persimmon, thinly sliced
- 1/4 cup pomegranate arils
- Flaky salt
Directions:

Heat oven to 375 degrees F. Place baguette slices in a single layer on a baking sheet. Brush both sides lightly with olive oil. Bake until the bread is toasted and just beginning to turn golden, about 7-8 minutes, flipping once halfway through.

Remove from the oven and let cool slightly.

Top each piece with a dollop of burrata, followed by the arugula and persimmons. Add a few pomegranate arils to each piece. Dot with olive oil and sprinkle with flaky salt. Serve immediately.
