Persimmon Bruschetta

  • 1 French baguette, sliced into 1/2 inch thick rounds
  • 2-3 tablespoons olive oil, plus more for drizzling
  • 4 ounces burrata
  • 1/2 cup arugula
  • 1 Darling Persimmon, thinly sliced
  • 1/4 cup pomegranate arils
  • Flaky salt


  1. Heat oven to 375 degrees F. Place baguette slices in a single layer on a baking sheet. Brush both sides lightly with olive oil. Bake until the bread is toasted and just beginning to turn golden, about 7-8 minutes, flipping once halfway through.
  2. Remove from the oven and let cool slightly.
  3. Top each piece with a dollop of burrata, followed by the arugula and persimmons. Add a few pomegranate arils to each piece. Dot with olive oil and sprinkle with flaky salt. Serve immediately.
